Ingredients

  • 2 large heads of Romaine lettuce, chopped
  • 6 slices thick-cut bacon, chopped
  • 1 chicken breast, grilled and sliced (optional for extra protein)
  • 120 ml grated Parmesan cheese
  • 60 ml Caesar dressing (Greek yogurt-based for high protein)
  • 120 ml sourdough croutons
  • 2 slices rosemary focaccia bread
  • Black pepper to taste

Instructions

  1. In a large skillet over medium heat, cook the chopped bacon until crispy. Drain on paper towels and set aside.
  2. Wash and thoroughly dry the Romaine lettuce, then chop into bite-sized pieces.
  3. In a large mixing bowl, toss the lettuce with the Caesar dressing until evenly coated.
  4. Add the crispy bacon, croutons, and half of the grated Parmesan cheese to the bowl and toss lightly.
  5. Transfer the salad to a serving plate.
  6. Top with the remaining Parmesan cheese and a generous amount of freshly cracked black pepper.
  7. Lightly toast the focaccia slices and serve them on the side of the plate.

Serving Suggestions

Serve immediately while the bacon and focaccia are still warm. For an extra protein boost, top with grilled shrimp or sliced chicken breast. This dish pairs perfectly with a glass of sparkling water or a dry white wine.
