Ingredients
- 3 large eggs
- 3 spicy beef or pork sausages (such as sucuk or ćevapi)
- 1 piece of flatbread (lepinja or pita)
- 30 ml ajvar (roasted red pepper spread)
- 1 medium tomato, diced
- 1/4 red onion, finely chopped
- 1/2 cucumber, diced
- A handful of fresh arugula
- 15 ml olive oil
- Salt and black pepper to taste
Instructions
- In a small bowl, toss the diced tomato, onion, and cucumber with a splash of olive oil and salt to make a simple salad.
- Heat a large non-stick skillet over medium heat. Add the sausages and cook until browned on all sides and cooked through (about 8-10 minutes).
- In the same pan, push the sausages to the side and lightly toast the flatbread until warm and slightly crisp.
- Heat a little oil in a separate pan over medium-low heat. Crack the eggs into the pan and fry sunny-side up until the whites are set but the yolks are still runny.
- To assemble, place the warm flatbread on a plate. Top with the fried eggs.
- Add the cooked sausages, a generous dollop of ajvar, and the fresh tomato salad over a bed of arugula.
Serving Suggestions
Serve immediately while the eggs are hot. This dish pairs perfectly with a side of feta cheese and a cup of strong Turkish coffee or black tea.
