Spiced watermelon & mint mocktails

Ingredients
- 1 small seedless watermelon, cubed
- 1 bunch fresh mint leaves
- 2 limes, juiced
- 30 ml agave syrup or honey
- 5 ml chili-salt (for rimming)
- Club soda or sparkling water
- Ice cubes
Instructions
- Rim the glasses: Rub a lime wedge around the rim of your glasses and dip them into a small plate of chili-salt.
- Prepare the base: In a blender, puree the watermelon cubes until smooth. Strain through a fine-mesh sieve to remove pulp if a clearer consistency is desired.
- Muddle: In each glass, add 5-6 mint leaves and a splash of lime juice. Lightly muddle to release the oils without shredding the leaves.
- Mix: Pour the watermelon juice and agave syrup into the glasses. Stir well.
- Assemble: Fill the glasses with ice. Top with club soda.
- Garnish: Add a sprig of fresh mint and a small wedge of watermelon to the side of the glass.
