Ingredients

  • 240 ml oat flour
  • 2 scoops vanilla whey protein powder
  • 5 ml baking powder
  • 120 ml liquid egg whites
  • 120 ml Greek yogurt (plain, non-fat)
  • 60 ml almond milk (unsweetened)
  • 5 ml vanilla extract
  • Fresh strawberries and blueberries for topping
  • Sugar-free caramel syrup
  • Mint leaves for garnish
  • Optional: Whipped Greek yogurt or light whipped cream on the side

Instructions

  1. In a large bowl, whisk together the oat flour, protein powder, and baking powder.
  2. In a separate bowl, combine the egg whites, Greek yogurt, almond milk, and vanilla extract until smooth.
  3. Slowly fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  4. Heat a non-stick skillet over medium-low heat and lightly coat with cooking spray.
  5. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  6. Stack the pancakes and top with sliced fresh strawberries and blueberries.
  7. Drizzle generously with sugar-free caramel syrup and garnish with a sprig of mint.
  8. Serve immediately with a side of whipped Greek yogurt.
